Ingredients:
  • 2 tablespoons basil seeds,
  • 1 cup chopped agar agar strips,
  • 1 litre cold milk,
  • 500 ml water,
  • Crushed ice,
  • Vanilla essence,
  • Almond essence,
  • Sugar to taste,
  • Food colouring.
Method:
  1. Put the basil seeds in a flat dish and remove any non-seed material.
  2. Chop the agar agar strips into 12 mm (half inch) pieces. Separate the strips. Agar agar strips can be obtained from Asian shops.
  1. If you cannot get agar agar strips, use set gelatine jelly, grated or chopped into small pieces. Alternatively, use tapioca strips.
  2. Soak the basil seeds and chopped agar agar strips in 500 ml water overnight. Alternatively, soak in luke warm water until the seeds are well swollen and the agar agar strips are soft to the touch.
  3. Make sure that the milk is very cold. Pre-cool your serving glasses in the fridge. Put sugar into the milk and sweeten to taste. Pour the sweetened milk into glasses until two thirds filled. Put two drops of your favourite essence and two drops of your favourite food colour in each glass. Mix well together. Put in three to four tablespoons of the swollen basil seeds and softened agar agar strips (alternatively the gelatine jelly pieces) in each glass. Mix well together. Top with crushed ice.
  4. Close your eyes and imagine that you are in Port Louis market. Give the glass contents a quick stir. Slowly sip and drink the alooda.
  5. Optional: Replace the milk with ice cold water for a plain alooda drink.
  6. Enjoy. Perfect on hot days to cool the body down and quench thirst

Ingredients:
  • 1 kg carrots grated
  • 600 ml (2 1/2 cups) milk
  • 110 grams (1/2 cup)
    white sugar
  • 85 grams (1/2 cup)
    brown sugar
  • 1 teaspoon ground green cardamoms
  • 5 grams (1/3 cup) butter
  • 30 grams slivered almonds
  • 40 grams raisins
  • 40 grams walnuts chopped
  • 1 teaspoon ground cloves
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground cinnamon

Method:
  1. Wash, peel and coarsely grate the the carrots. Combine the carrots and milk in a pan, bring to boil, reduce heat to medium low and cook for 20-25 minutes, stirring continuously. Cook until the mixture is nearly dry.
  2. Add the white sugar, brown sugar and half the cardamom. Mix well together and continue stirring. Cook for 10-12 minutes. Remove pan from heat and set aside.
  3. Heat butter in a pan (large enough to contain the carrot mixture) over medium low heat, fry the slivered almonds until golden. Stir in the carrot mixture together with the raisins, walnuts and the rest of the spices, with the exception of the ground cardamom. Cook until the mixture begins to separate from the sides. Serve hot, garnished with the remaining ground cardamom. This is a traditional Indian sweet served during festivals.
"Alternative Microwave" Carrot Halwa Recipe
Ingredients
  • 2 cups freshly grated carrot
  • 1/4 to 1/2 cup skim milk powder
  • 1 cup sugar
  • 1/4 tea spoon ground cardamom
  • 1/4 cup thickened cream
  • Raisins, fried chopped walnuts and slivered almonds for garnishing
Method:
  1. Place the freshly grated carrot in a microwave safe bowl and cook it on high for 7-8 minutes.
  2. Remove it from the microwave and add milk powder, sugar, thickened cream and cardamom powder. Return to the microwave and cook on high for another 7-8 minutes.
  3. Remove from the microwave and either serve it hot or cold after garnishing it with raisins, walnuts and almonds.
  4. Can also be set in the fridge for real "Halwa" consistency.
